Combine butter, parsley, garlic, and lemon zest in a bowl and season well with salt and pepper. Heat a grill plate or BBQ over a high heat. Drizzle olive oil over the flesh of each lobster half and brush with pastry brush for even coverage. Drizzle bread with remaining olive oil.
